Funky Caramelized Onion Shortbread Tart


Funky tarts? Yes please. This was a simple clean out the fridge experiment. I had a bunch of caramelized onions, cooked mushrooms and broccoli and a tiny bit of Limburger cheese. Now, if you haven’t had Limburger, you probably aren’t aware of the STINKY FUNK!! It is very intense. The BF and I probably buy a block every year or so and have to figure out a way to use it up. Note that a block is around 10 oz. usually! I figured using about 2 oz. for 1 8 inch tart and 4 individual cuties would be more than enough. I cut it with just a bit of sharp cheddar for balance.

I made the shells out of rye flour and butter and added fresh thyme leaves and black pepper to the dough. Savory shortbread! Yum!

I crumbled to tofu and added the cooked onions/veggies and cheese along with fresh herbs (thyme, sage and rosemary) and lots of black pepper and smoked sea salt. Talk about a party in your mouth!

Verdict: Yum! Only make if you are serving this for company. I served the 8 inch tart at a small dinner party and froze the individual ones for later meals. All you have to do is defrost them and they are great served at room temperature!
