It feels almost silly putting this up here, but something that takes 5 minutes to throw together can enhance a meal in such a big way, especially in the winter!
English cucumbers are great and available all year long. Having this as a side dish in the dead of winter will bring some sunshine into your life. I promise.
It’s simple. Slice a 12 inch medium English cucumber and a small white onion. Throw a bit of salt (if you want to get fancy, use smoked sea salt) and toss with your hands. Now, add a glug of white wine vinegar (or plain white vinegar) and a pinch of sugar, white pepper and a handful of chopped fresh herbs. I used dill here.
This will keep in the fridge for 4 ish days. It’s great as a topping on veggie burgers or as a side. You can add whatever fresh herb that will compliment your meal! Try adding a couple drops of toasted sesame oil and sesame seeds. You can also add caraway seeds and cooked beets! Yummmmm!! Quick pickles compliment pretty much almost any meal.
