Black eyed peas are one of the most underused legumes in my opinion! They’re quick cooking and have such a great texture and unique flavor. My Cajun Black Eyed Peas are full of so much flavor, with each bite giving you a different experience. Cumin seeds, fresh thyme, peppers, onions, celery, tons of garlic,fresh jalapeno, canned tomato, frozen okra, bay leaves,lemon juice and zest, and old baby seasoning work together to create something really special. I eat it over brown rice for a super filling meal, or as a stew like pictured above.
I place the dry peas along with bay leaves and water and turn the heat to high. While the peas are cooking, I prep the veggies and get them going in another pan, sauteing the onions, garlic, celery, and pepper with the spices and olive oil. Once the veggies are soft, I throw in the black eyed peas and cooking liquid, bring to a strong boil (adding water or veggie broth as needed) until the peas are tender, then I stir in the tomatoes, okra, lemon juice/zest and let it stew together for an additional 30 minutes or so.
This dish, like so many stews is better the next day and freezes beautifully, so make a big pot and enjoy!
