Roasty Goodness


This is another vegan meal I made for Five Seventy Market. I marinated the tofu in tamari/ginger/garlic/sesame oil and spices, then roasted it. I roasted the beets and tossed with lemon,sesame oil, ginger, garlic, soy and spices. I tossed Yukon gold potatoes with fresh garlic, olive oil, smoked paprika and rosemary, and served it on a bed of sauteed cabbage, collards and other veggies and a side of lemon tahini sauce.
